This clos (walled vineyard) in Morey-Saint-Denis owes its name to the presence of the rock outcrops on the surface. A large rock embankment crosses the Morey-Saint-Denis hillside from side to side. This rock embankment was exploited at an old quarry that once existed not far from this clos at the border of Morey Saint Denis and Gevrey-Chambertin.

In 228 L barrels for ten months (30% new barrels) then five months of flavor maturation in stainless steel vats.

Vinification

Cold pre-fermentation maceration for ten days with pumping over and punching down under temperature control throughout the fermentation.

Serving temperature: 16°C
The color is deep ruby and the nose expresses a complex bouquet of floral and fruity aromas with some discreet woody notes. 

Food and Wine pairing

Aromatic tender meats with parsley come to the party: a prime rib, a braised lamb, roast veal with mushrooms or a beautiful piece of game bird, in sauce or quite simply roasted. The meat should not too hard and firm, so that the tannins of this appellation envelop them without dominating them.
Cheeses: preferably soft cheeses with a washed rind: Époisses, Langres, Soumaintrain, Saint-Florentin and Cîteaux.
