A most emblematic white wine

Located in the south of the Côte de Beaune, Chassagne-Montrachet shares with the village next door, Puligny, one of Burgundy's best-known white wines: Montrachet. This is a vineyard with a high concentration of white wines, around 70% of production, and 30% of reds.
Within this appellation, there are 19 climats classified as Chassagne-Montrachet and three grands crus: Montrachet Grand Cru, Bâtard-Montrachet and Criots-Bâtard-Montrachet.
Climats include La Romanée, Les Grandes Ruchottes, La Grande Montagne, Vigne Blanche, Morgeot, Ez Crottes, Les Chaumes, Vigne Derrière, Clos Saint Jean, Les Chenevottes, La Roquemaure...
For the whites, Chardonnay has a beautiful, well-marked golden color with green highlights. Aromas of hawthorn, honeysuckle and acacia blend perfectly with those of hazelnut and verbena.
On the palate, the Chassagne-Montrachet appellation displays a fine minerality, with a light but present flinty aroma.
As it ages, the wine becomes a little fatter, with hints of honey and butter. The wine is generally quite round, with a nice curve, slightly opulent with a very pleasant attack.
The color of the reds is quite distinctive, tending towards violet. Made from the Pinot Noir grape variety, the bouquet is obviously characterized by red berries such as Morello cherry, redcurrant, raspberry and wild strawberry. Animal and spicy notes are also present. All these aromas promise a full-bodied mouthfeel, with tannins that may be a little austere in youth, but which disappear with age, giving way to a concentrated, flavorful structure.
With such quality, food and wine pairings are sublime. For whites, its power is the ideal partner for white meats such as poultry or veal. Of course, Chassagne-Montrachet goes perfectly with fish such as salmon, but also lobster and crayfish. The recommended serving temperature is between 12 and 14 degrees.
For reds, its power and tannins will go well with fine cuts of meat such as grilled lamb, pork or game birds, all at a serving temperature of between 14 and 16 degrees.
