Nuits Saint Georges, a strategic location

Today, our tour of the Côte de Nuits stops at Nuits Saint Georges. One of Burgundy 's most distinctive communes, it's a veritable crossroads. This strategic position gives it a palette of aromas and structures that only it can offer.
Like Burgundy wines, Nuits Saint Georges reds are made from Pinot Noir grapes, and the rare whites from Chardonnay.
It's a wine that hasn't always had a good reputation, since it was considered a"game" wine, i.e. very tannic, very masculine and very powerful. It's tending to change, becoming lighter, fresher and more elegant. It's one of the most racy wines on the coast.
For the reds, the color is very distinctive, tending towards intense crimson and sometimes mauve. In terms of aroma, Nuits Saint Georges changes completely with age. When young, the wine has red fruit aromas of cherry, strawberry and blackcurrant. As it ages, Nuits Saint Georges tends towards macerated fruits such as prunes, and even leather, truffles and game.
Like most Burgundy wines, it's very structured, well-balanced and well-structured, sometimes syrupy and full-bodied.
This type of wine goes perfectly with virile meats such as prime rib, duck breast or roast lamb. Nuits Saint George also goes very well with fish such as carp. As for cheeses, it goes very well with soft cheeses. These food and wine pairings are best served at a temperature of 15° to 16°.
Nuits Saint Georges has some rare whites. These are wines with a fairly deep gold color. On the palate, aromas lean towards brioche and honey, with a background of floral notes.
Nuits Saint Georges is a wine for aging and laying down. Patience is often required to enjoy it.
