Rully, an emblematic name on the Côte Chalonnaise

Our tour of the Côte Chalonnaise takes us today to Rully. An emblematic appellation of the Côte Chalonnaise, between Bouzeron and Mercurey, it is planted with both Chardonnay and Pinot Noir. Situated on a variety of soils with different exposures, the vines give birth to wines that rival the best Côte de Beaune appellations, thanks also to brown or calcareous soils with little clay texture for the Pinot Noir, covering 121 hectares, and clay-limestone for the Chardonnay, covering 246 hectares.

The color of the whites is golden with green highlights, becoming more intense with age. Aromas include hedge flowers such as acacia, hawthorn and honeysuckle, as well as violets, fruits such as white peach and lemon, and flint. This wine can be kept for 3 to 4 years , giving rise to new aromas such as honey, quince and dried fruit. On the palate, it's a wine that's recognizably fruity, yet lively and round. 

 

Red wines range in color from cherry ruby to dark garnet. The bouquet is characterized by black fruits such as blackcurrant and blackberry, as well as licorice, lilac and rose petals. With age, it evolves towards cooked fruit. On the palate, the tannins respect the fruit. A few years' cellaring will give it a nice chewy mouthfeel. 

 

When it comes to food and wine pairing, white wines are ideal for fine dishes with tender flesh, such as pan-fried river fish in a white sauce, or warm shellfish. It also goes well with hard cheeses such as Comté. It can be served as an aperitif, at a serving temperature of between 12 and 14 degrees.

Red wines can be surprisingly solid in structure, but at the same time very fruity. So it's perfect with roast poultry or offal. Risottos and pastas also go perfectly with Rully. All this at a serving temperature of between 14 and 16 degrees.
