Food & wine pairing

Musky, marbled and tender meats are in for a treat: prime rib, braised lamb, roast veal with mushrooms or a fine piece of game bird, in sauce or simply roasted. It's important that the meat is not too hard and firm, so that the tannins of the appellation pack them in without overpowering them. Cheeses: soft, washed-rind cheeses are preferred: epoisses, langres, soumaintrain, saint-florentin and cîteaux.
