Food & wine pairing

With its silky tannins and round texture, it prefers raw Parma-style hams and subtle, fibrous meats such as rabbit and boiled beef. Giblets in sauce and game birds also benefit from its smooth, velvety tannic structure. Its fleshy mouthfeel will also round out the spiciness of curried meats and poultry, or even the aromatic strength of antipasti and marinated vegetables. It also pairs well with mild cheeses such as Vacherin, Reblochon and Cîteaux.
