The vines are planted on limestone and clay-limestone soils from the Middle Jurassic: white oolite from the Bathonian at the top of the hillside, entrobic limestone from the Bajocian at the bottom. This locality lies at the bottom of the hillside, on thick, rich soil. It is composed of marl and clay.

Food & wine pairing

Its tannins are better suited to wild fowl than to young veal. Braised or roasted game will be caressed by the fleshy texture of the Morey-Saint-Denis appellation, and its sustained tannins will hold out until the juices of these musky meats are fully extracted. These same tannins will give a fine entrecote or a thick rib of beef its full relief. Cheeses with a washed rind will also find a partner with character that's easy to live with.
