Technical data

Terroir

Bouzeron's soils were formed during the Oxfordian, in the Upper Jurassic period: 163 to 157 million years ago (the time of the first birds and the great dinosaurs). These are calcareous sedimentary rocks, interspersed with banks of marl (greyer soil). Fossils and limestone (silica trapped in the limestone) are found.

Food & wine pairing

With its generous structure and slightly buttery finish, it lends itself to contrasting pairings, between rustic cuisine, exotic freshness and lemony sweetness:
Salade paysanne (potatoes, bacon, tomatoes, hard-boiled egg, balsamic vinaigrette): the wine's roundness accompanies the greediness of the dish, while its acidity balances the richness of the bacon and eggs.
Fish ceviche, pomegranate and mango: the freshness of the lime and the spicy undertone of the wine resonate perfectly with this dish's tangy, fruity accents.
Lemon meringue pie: the wine's buttery finish prolongs the sweetness of the meringue, while its lively notes underline the freshness of the lemon.
