When it was created, this orchard was intended, on an experimental basis, to demonstrate the possibility of growing low-stemmed fruit trees on land abandoned by vines. As well as growing vines, Joseph Sordet popularized the practice of grafting, supplying grafted trees to the many school nurseries in the Chalonnais region. This is how the Verger d'Exemple de Bouzeron earned its name, a symbol of dedication and transmission. A little less than a century later, still rooted in Bouzeron, we wanted to pay tribute to its creator by dedicating this cuvée from the Domaine's oldest vineyard, which faces south-east and was harvested by hand on September 29, 2021. After 16 months of ageing in 228 and 450-liter oak barrels, only 590 magnums and 17 bottles were produced. (Bottles are reserved for tastings, not for sale). See more

Terroir

Bouzeron's soils were formed during the Oxfordian, in the Upper Jurassic period: 163 to 157 million years ago (the time of the first birds and the great dinosaurs). These are calcareous sedimentary rocks, interspersed with banks of marl (greyer soil). Fossils and limestone (silica trapped in the limestone) are found.

Winemaking

Slow, gentle pressing. Fermentation at controlled temperatures between 18°C and 20°C to respect the delicate aromas of Aligoté.

Serving temperature: 12°C
Supple, consistent, with a texture chiseled by a lively alertness, it can be enjoyed at any stage of its life, for while it is fond of its youth, it develops great complexity with age and proves to be a great wine for gourmets. Serve it as an aperitif with gougères, or with starters such as oysters, jambon persillé, escargot de Bourgogne... and even white meats...

With seafood and oysters, it will transcend its iodized, salty notes. With fish or shellfish, choose older Bourgogne Aligotés, capable of revealing their terroir. Why not try it with white meats, or at the end of the meal, with fresh or mature cheeses.
