Extending Rully to the south, the Mercurey vineyards are planted on marl-limestone soils derived from geological formations of the Upper and Middle Jurassic, with a predominance of the latter, which favors the Pinot noir grape variety. White wines, though a minority, are also highly sought-after. From terroirs of fine marl and clay, they are well-structured, full-bodied and generous, and stand out from the white wines of the southern Côte Chalonnaise. Here, we find a condensed terroir, bringing together the parent rocks of the Côte de Nuits and those of the Côte de Beaune, combined with a diversity of exposures and altitudes, making Mercurey the terroir offering the greatest diversity of expression in Burgundy.
