Extending southwards from Rully, Mercurey's vineyards are planted on marl-limestone soils derived from geological formations of the Upper and Middle Jurassic, with the latter predominating, which suits the Pinot noir grape variety.
Ce patronyme est fréquent dans l’ouest de la France. Ou bien pouvons–nous voir dans la première partie de ce mot : Cara le nom Caras/Charas « amas de pierres ». Le terrain, en effet, est caillouteux et, en haut, un gros meurger, ou tas de pierres qui ont été retirées et déposées en limite de la parcelle, est encore visible.
