Cold pre-fermentation maceration for 10 days, pumping over and punching down with temperature control throughout fermentation.

The color is limpid, brilliant, with deep garnet reflections.
The nose is still a little closed at this stage, but reveals a beautiful complexity of fruit with notes of blackcurrant, blackberry and morello cherry. Subtle notes of undergrowth, a touch of spice (cinnamon) and a lightly woody background. Fresh, almost acidic attack on the palate. Concentrated, rich wine, with tannins that are still tight, a persistent finish of black fruits and spices. A wine of character, still young, with real ageing potential.
